Taste of Abra: Pancit Miki
The word pansit or pancit originates from the Hokkien words pian-e-sit which means something that is conveniently cooked.
In most panciterias in Bangued, all the main ingredients of pancit miki (egg noodle soup) are made from scratch. From boiling the rurog (pork head bones) for the savory broth to making the miki (as in the choice of noodles or pancit), everything is diligently made hours before the crack of dawn.
