Taste of Abra: Oong
In Abra, rainy season means wild mushroom or oong (pronounced o-ong) season. Some people prefer sukol or mushrooms with closed pileus or caps. Others prefer ukrad or the ones with open caps because you get more of the fleshy caps and gills. Whichever you fancy, these fungi are darn good adobo-style and in dinengdeng/inabraw with oggot ti paria (young shoots and leaves of bitter melon/gourd) or wrapped in banana leaves and steamed over hot coals.
