Taste of Abra: Ipon

Ipon may not be from our own backyard but due to our proximity to Ilocos provinces, it has long been considered a local delicacy. It can be eaten raw or kilawen-style with onions, ginger and sugarcane vinegar or cooked nalengta/nalingta-style (steamed) mixed with onions and tomatoes as seen here in the picture. It can also be enjoyed as torta (scrambled egg and ipon) and sinigang (soured with pias/bilimbi and tomatoes).
It is in season from August to late February and sold at Bangued Central Market on Partelo Street.
